This cherry beet smoothie will start your morning with plenty of good-for-you vitamins!!
I think I’ve mentioned, I don’t like beets.
I’ve never liked beets.
I want to like beets.
I continue to cook beets in the hopes that I will learn to like beets.
I still don’t like beets.
But I had them for breakfast the other morning and MAN were they good! You see, I had some leftovers from my last recipe and just could not bring myself to eat them as they were, despite the fact that everyone else loved them. So I got creative and ended up with this surprisingly sweet and delicious smoothie.
They actually aren’t too bad when served a little on the sweet side and I know they have crazy good health benefits. So if I’m going to have them, then this is the way I’ll make them. You can’t “beet” a beautiful smoothie first thing in the morning!!
Just sayin’.

Ingredients
- 1 cup frozen cherries (unsweetened)
- 2 cups marinated beets (see recipe link above)
- 1 cup light coconut milk
- 1 medium banana
- 1 tsp. ground cinnamon

Instructions
Place all ingredients in blender and blend until smooth.

Oh my gosh, I am opposite of you and I LOVE BEETS. But I have never ever thought of putting them in a smoothie!!! What a fun idea. Thanks for sharing 🙂

LOL… you are too cute! I’ve been juicing my beets and adding them to smoothies for awhile now, my family calls them the ‘dirt’ drinks.

I like beets (it took me a while), but my problem is the staining. How do you keep them from staining your hands?

They didn’t stain my hands too bad. But you can always wear gloves.

Frozen mangos are the typical substitute for bananas.

I purchased some beet powder form the local health food co-op and have been trying to figure out how to use it. This is PERFECT!! I am making for breakfast for my son and I tomorrow. So excited to try. Thanks for sharing.

Costco of all places sells cooked beets packed in individual servings. This would be a great use for them. I’m going to try!

We are getting beets in our next CSA box. I have never eaten beets before and the smoothie looks like it might be good. Only problem is that my daughter is allergic to banana. What could I substitute for the banana? thanks

Rose – I’m not sure how it would go with the beats, but typically, mango is the substitute for bananas.

This smoothie looks so good!! I’m making the marinated beets right now so I can make the smoothie tomorrow or the next day!!
Also, for the person looking for a banana substitute, you could try avocado. I make a lot of smoothies with that and it would be similar texture as the banana and not overpowering flavor.

It was delicious! I used almond/coconut milk blend instead of the light coconut milk so mine probably wasn’t as thick. I also put some fresh ginger in place of the cinnamon just because I use that a lot in my smoothies. I’ll definitely make this one again!

Tip for the stains on hands…use a little baking soda. Took mine right off.

This may be a dumb question. I know what beets are but what are marinated beets?

Why do the beets need to be cooked? I have used them raw in other smoothies.

I love smoothies and I love beets. Never thought to put beets in smoothies though. I love the photo of the smoothie in the old timey milk bottle! Will give this a try when I am back home from Vegas.
