Easy One Pot Meatball Stroganoff Recipe
Noodles and meatballs (not necessarily together) are staple dinner ingredients in our household. If I had a dollar for every time my kids have requested noodles for dinner… Well… I’d have a lot of dollars, lol!
Most of the time, I’ll make noodles with butter and parmesan, but sometimes I get creative and add chicken, veggies or in today’s case, meatballs!
Our go-to brand for noodles is theNo Yolks Broad Noodles. The No Yolks Noodles cook up in a flash and can be used in just about any type of recipe; they’re great in soups, casseroles,stroganoff and of course on their own with butter and parmesan.
No Yolks come in different sizes so they’re great in almost any recipe. (Broad, Extra Broad, Fine, Kluski, Dumplings, and even Stir-Fry – which I can’t wait to try out). They’re made with egg whites which makes the noodles low in cholesterol, fat and sodium.

Stroganoff is one of those universal comfort dishes that almost everyone enjoys and you’ll love how easy this One Pot Meatball Stroganoff recipe is to make. You can have the meal on the table from start to finish in 20 minutes!

Ingredients
Scale
3 to 4 tbs butter
8 oz sliced mushrooms
1/2 cup diced onions
3 cups beef broth
1/2 tsp garlic powder
1 tsp Italian spice blend
1/4 tsp salt
1/2 tsp black pepper
3 cups No Yolks noodles
3/4 cup of cream
1/2 cup sour cream
Meatballs, (the amount you desire – see tips above) defrosted and warmed up in the microwave.
optional: fresh parsley for garnish
Instructions
Add butter to a large skillet and heat skilletover med-high highheat. Add mushrooms and onions and cook ’til browned.
Add beef broth, garlic, Italian spice blend, salt, pepper and noodles to skillet. Cover and cook for 6 to 8 minutes, stirring occasionally until the noodles are al dente. (Still at med-high heat.)
Stir cream into the skillet, add meatballs. Reduce heat to med-low. Cook an additional 3 to 5 minutes until liquid thickens a bit.
Gently stir in sour cream and heat through.
Garnish with fresh parsley
Serve and enjoy!

If you use half-n-half instead of cream, you may end up needing to add a little bit of a cornstarch slurry for a thicker sauce.

Greek yogurt is a healthy alternative to the traditionally used sour cream in beef stroganoff recipes, so you can be confident that your family is getting a satisfying, healthy meal. Fresh dill and paprika will provide a sweet, slightly smoky garnish to top off the dish.
Traditionally, tenderloin is the meat of choice for Stroganoff, and after testing out a few alternatives—strip steak and ribeye along with more inexpensive cuts like flap meat, hanger, flank, and skirt—I decided to stick with tradition (flap meat and hanger came in a close second).
The sauce for Swedish Meatballs is a creamy gravy that is made with butter, beef broth/stock, thickened with flour and made creamy with cream. But the most important flavour for the a really good creamy gravy is the pan drippings after searing the meatballs.
Mayonnaise. Here's an ingredient you probably have on hand: mayonnaise! You can use it as a cup-for-cup replacement for sour cream in most recipes—including baked goods! (Mayo adds a ton of moisture to things like cakes and muffins because it's made from eggs and oil.)
Italian-style meatballs often include additional ingredients such as milk, olive oil, ground pork, fresh parsley, red pepper flakes, Italian herb seasoning, and sometimes a combination of ground beef, veal, and pork [2].
Orecchiette: Known as small ears, orecchiette pasta derives from Puglia. They are often served with oil-based sauces and especially popular with broccoli rabe and sausage. Spaghetti: The most famous long pasta shape, spaghetti mixes wonderfully with a variety of sauces. It's the classic shape to serve with meatballs.
Solution: Choose beef tenderloin for superior texture. Sauté button mushrooms, then brown the beef in the same pan and deglaze the pan with beef broth. For more complexity, prepare a sauce with onion, tomato paste, brown sugar, chicken broth, and wine. Sour cream can curdle if added directly to hot liquid.
What is stroganoff sauce made of? Stroganoff sauce is a sour cream gravy made with beef broth that's thickened with flour. It's flavoured with mustard and has mushrooms in it. I love the pale brown creamy colour against the deep golden brown seared beef!
Crumble in the stock cube and stir in the paprika and tomato purée. Cook, stirring, for 2 minutes. Add the beef consommé, mushrooms and mustard. Bring to the boil then lower the heat and simmer for 10–15 minutes, or until the volume of liquid has reduced by half.
Stroganoff is a dish featuring sautéed mushrooms and onions in a creamy sauce, while Swedish meatballs are small, bite-sized balls seasoned with nutmeg and allspice. Stroganoff is typically served with egg noodles, while Swedish meatballs are usually served over mashed potatoes or sometimes egg noodles.
Whole milk yogurt works best and brings a big reduction in fat, plus more protein and calcium. Baked goods made with yogurt as a straight substitute for sour cream will turn out less tender, lighter in texture and have a tangier, less buttery flavor.
While its texture and flavor vary more from sour cream, this substitute lends itself well in a pinch or where a thicker texture is desired, such as in dips or toppings. It is also great for heated sauces since cream cheese does not curdle quite so readily as sour cream, buttermilk and yogurt.
Sour cream is an easy replacement for heavy cream. It can be easily stirred into a dish and offers another flavor profile to soups, stews and sauces. Plus, using it as a heavy cream substitute is a great way to use up that lingering tub in the fridge.
In most cases, plain yogurt or Greek yogurt can be used in place of sour cream—and vice versa. Sour cream will give you a similar texture and tanginess, and swapping sour cream for yogurt is a simple 1-to-1 ratio.
